I have always made dinner for our family at least 5-6 times a week. I always look for new recipes to try that are healthy, easy to prepare, and kid approved by our 2 1/2 year old son. When I go grocery shopping I usually go around the perimeter of the store avoiding the middle section with all the pre-packaged foods, with exception to getting some canned goods (diced tomatoes, sauce and broth), but stick to the whole foods when planning out my weekly dinner menu. My son also loves to be my helper when we put the fruits/veggies in the bags and also helps out with making some of our dinners, which is a whole other topic we can discuss later.
I wanted to share with you these new recipes I recently tried that were not only easy to make, but had all the “good stuff” that we need to eat to help us feel better, look better and they just taste amazing!! I felt like a chef in a upscale restaurant, probably because the ingredients I used were high quality, with some surprising new flavors too!!
My husband, Dominic, brought home the Upgraded Chef Cookbook. At first glance I was intimidated to try some of the recipes because I thought they might be too time consuming, (I only have so much free time with a toddler!!) or I might not find the right ingredients. It took me a week or so and then I was stumped for dinner ideas again when Sunday night rolled around so I thought I would just try one. I decided to make the bacon beef loaf, because who doesn’t love bacon and it seemed like an interesting twist on a traditional meatloaf. Some of the ingredients surprised me. Who puts cinnamon, allspice and cloves in their meatloaf? Sounded a little strange, but with the other flavors (green onion, collard greens, carrots and bacon) after I cooked it, it all went together nicely!! We loved it!! It was delicious and my son loved the special hamburger with greens, carrots and other veggies baked right in! Doesn’t get better than that. I also made mashed cauliflower to go on the side and it was just like we had a gourmet meatloaf with creamy mashed potatoes. However, I felt good knowing my family was getting a hefty dose of greens, protein and healthy fats.
I couldn’t believe how good it turned out so the next night I decided to make another soup recipe and that was a winner too!! We loved the creamy broccoli leek soup. It only took about 20 minutes to make too!! I normally don’t make homemade soup so I was impressed by how easy and delicious this soup turned out to be, and with all the veggies blended up, my son just gobbled it all down!
